Veggie soup is just what this wintry weather week needs.
Keeping it healthy. Tons of white cabbage, a few shreds of purple cabbage, diced carrots, sauteed onions, fresh herbs, two cans of different beans, chopped tomatoes, beef broth and fresh garlic.
Taste, taste and taste some more until the flavors are just right. No meat or pasta, just veggies and legumes.
I added the rind of a Parmesan wedge to bathe in the broth and give a nice flavor. The soup will package this up into grab-and-go containers.
A handful of fresh spinach tossed in bowl when reheated and a few dashes of hot sauce equals soup perfection.
Homemade wins again.
