prep before classes

​Prep for classes begins days before, and continues until guests walk through the door. Recipe testing, shopping, often at several stores to find the perfect ingredients. Making fresh bread the day of a class. Sometimes I need to make a "swap out" if the recipe requires a long marinade or chilling time. Cleaning, typing, editing, setting up, cleaning dishes, setting the table. 

These Cypress sea salt tomatoes will be a perfect addition to our cast iron frittata once roasted and caramelized. I prepped them before the class arrived to let the flavors absorb in the tomatoes. I tell the kids they taste like candy. I can get them to try new flavors and textures you the parents can't. Some how it just works when they are in class.
